Roasted Broccoli with BBQ Chicken Thighs

If y’all have been reading my blog for any length of time, I’m sure you’ve seen a trend emerge in the recipes I post. Our schedule is kind of crazy and I usually cook dinner last minute…meaning I need quick, easy meals so we can eat before midnight. This dinner couldn’t have been easier to prepare! Originally I was planning on just posting about the broccoli, but the chicken ended up being so amazing that I had to mention it as well. I don’t have step by step pictures of the chicken though…sorry! Like I said, I wasn’t planning on it. We also had rice with this meal…but it was just rice, nothing special.

For the broccoli, drizzle olive oil, salt, pepper, garlic (or garlic powder if you’re feeling lazy like I was) and parmesan cheese, and toss to coat well. Roast at 400°F for about 15 minutes. Done. Seriously…so easy, right?!

The chicken was simple too! I lightly oiled the tinfoil so it wouldn’t stick, and laid the chicken skin-side down. I happened to have boneless thighs on hand which worked well because they don’t have to bake very long. After patting the chicken dry I lightly salted and peppered it, and then generously basted it with Sweet Baby Ray’s BBQ sauce on both sides. I put that in the oven for 20 minutes also at 400°F. When it came out of the oven I covered it with tinfoil and let it rest for bout 5 minutes. Done and done!

Favorite Baby Items (10 Months)

I have a few legitimate favorite things this month! Most of Evan’s very favorite things are still not baby items–currently cardboard boxes are super high on his list–but there are a few things that I wanted to share with you. I’m gonna dive right in and keep it short and sweet because I still have a dinner to cook and laundry to do. Here we go!

Aveeno Baby Fragrance Free Soothing Relief Creamy Wash and Aveeno Baby Fragrance Free Daily Moisture Lotion
This one is a dual favorite. A few months ago Evan had a really dry, rough patch of skin on his back. I didn’t really think it was eczema, but I definitely didn’t want him dealing with whatever it was, so I asked his pediatrician what we could do for it. He said it was likely the beginnings of  mild case of eczema and recommended a good moisturizer every day after his bath (which honestly I had seriously been slacking on) to try and keep it under control. I went to Target and picked up the Aveeno Baby Fragrance Free Daily Moisture Lotion mostly because I had seen pretty good reviews online and it was on sale, so I figured it couldn’t hurt to try it. Alone, it worked well, but when I started using the Aveeno Baby Fragrance Free Soothing Relief Creamy Wash (geez that’s a long name…) his skin went back to being baby soft and smooth. I had the wash since the end of last year and just never used it because it didn’t seem to lather quite as much as I preferred, but now I only use that. It is so soft on the skin, it does get a good lather if you work it in your hands first, and it rinses clean without any kind of residue feeling. All things that I like…and it cleared up our skin issue! Yay!

Evan got this as a gift from one of our friends, and we use it all the time. It is so convenient to have his snacks in compact containers that I know wont just accidentally pop open and create a mess everywhere! His snacks stay fresh without getting stale, I can stack as many as I need together and take them with us, and the pieces come apart easily (but not so easily that it defeats the purpose) so I can clean them. Evan likes to carry it by the handle on top too. Baby and mom approved!

Okay so I wrote about loving the Oball rattle last month…and we have a new Oball favorite. One of Evan’s friends had this car, and when Evan saw it he went nuts. He loved it! It was so cute watching him zoom it around the floor while he was crawling after it. We happened to be at Target later that night and saw one on sale…so we scooped it up and Evan was a very happy camper. Oball is becoming one of our favorite baby brands.

Summer Infant Pop ‘N Play Portable Playard
This one is more of a mommy favorite than a baby favorite. The Summer Infant Pop ‘N Play Portable Playard was just released at the beginning of the month and we bought one the day after it came out. With our apartment being so small we have limited storage options, so it is hard to be able to baby proof everything as we really should. This play yard is great because it is big enough that Evan can crawl around and play (safely!) but small enough that it doesn’t take up all of our floor space. Most of the time I’ll hop in there with him and we will play together because I don’t want him to think he’s in a cage or something, but it is nice to be able to get up and go to the bathroom without having to pee at lightning speed and race back into the room to make sure he hasn’t gotten into trouble. Know what I mean, moms and dads? I know you do. Anyway, this one is particularly nice because it folds up super compact and is really lightweight, so it is easy to transport too. We have taken ours camping, to fourth of July fireworks, and to the beach. It works great and is so convenient! They are making a canopy for it as well, but I don’t think it is out yet.

These rice husks are fantastic. I know I probably give Evan too many carb loaded snacks, but I love these ones because he can hold them himself and it is helping him learn how to take reasonable sized bites out of things. He loves the independence of eating them all on his own, and I love a snack that tastes good and helps him learn how to eat. They are super inexpensive at Walmart, which is awesome, and they come in a few flavors. We prefer the veggie ones. How much veggie stuff is actually in them…I don’t know…but enough that they can market it as such, so I’m cool with that.

Perfect timing! I put dinner in the oven just as I started writing this and it just beeped that it’s ready. I’ll share the recipe for what I made tomorrow!

Eleven Months

My baby boy is eleven months old today which means I only have one month until he becomes a big boy! I don’t think I’m ready for that! Earlier this month I was thinking about my baby shower when I was opening gifts–I remember looking at some of the 9-12 month clothes and thinking it was such a long way away before we would need those outfits…now Evan has grown out of most of them. He keeps growing and changing so quickly! Today I had a total mom moment while Evan was playing–I was just so proud of him and so impressed with how smart he is that I couldn’t help but get a little teary eyed. I know, I know…I’m going to be one of those moms who cries at everything.

This month Evan is getting four more teeth. I thought only three were coming in at once, but when I was brushing his teeth tonight I noticed the fourth one just below the surface. I think once his teeth all come in he is going to look like a completely different person! Evan is a speed crawler and a pretty decent cruiser, although he is still too apprehensive to try and stand solo or take a few steps. I’m totally fine with that though! Once he starts walking I know it wont be long before he takes off running, and I’m not quite ready to have to chase him everywhere yet!

Last month I talked about how we love to chase-crawl with each other, and now it has evolved into a new game of hide and seek. I’ll make a big deal about running away and “hiding” somewhere (usually half visible behind his play pen or something like that) and he will squeal and laugh and crawl after me as fast as he can until he finds me. When he finally gets to me the look on his face is absolutely priceless. Sometimes when I’m in the middle of doing something and he’s is playing by my feet, he will suddenly crawl away from me around the corner, giggling the whole time. If I don’t come find him right away, he’ll usually crawl back into the room so I can see him again, turn right back around, and take off one more time. When I do follow him into the other room, he has usually turned around and has sat down waiting for me…as soon as he sees me he giggles and takes off until I catch him! I love it. It’s so adorable and we have so much fun playing his little games.

Evan has also learned how to kiss me! Of course, his kisses involve him diving onto my face with a wide open gaping mouth and just staying there, drool everywhere and laughing. If he weren’t my child and I didn’t positively adore him, I would think it was so gross. He is my baby though, and I love it!

High Five for Friday

Can anyone else believe it is the last Friday in July already?! Complete and utter craziness. I don’t think I will ever not be surprised at how quickly time passes. I had quite a productive week this week–how about you? I hope so!

Okay y’all…let’s get to it.

1. On Saturday my planner came and to say I was excited was an understatement. In the last week I have been experimenting with ways to organize it and what color code I want to use, etc. That might make me sound like a nerd, but I love to be organized so much. Sometimes looking at my apartment you would have NO idea that was true…but we’re working on that. Anyway, it has felt awesome for the last week to start to make myself more organized. I feel a lot more on top of things.

2. On Instagram yesterday I shared a picture of these beautiful plumeria flowers I saw while walking home from a friend’s house. These flowers are all over here in Hawaii, but I always love running into them. These ones were particularly lovely!


3. Evan has decided that he wants to eat completely independently, which makes meal time an epic battle. I am all for him eating independently (maybe I should have better researched baby-led weaning when starting foods with him?) but all that ends up happening is a mess. I’ve tried to move him away from purees and give him almost all table food–after all, he is completely capable of chewing and eating–but half the time all he does is play with it. If I try to go back to a puree-like meal and feed it to him, he grabs the spoon and tries to feed himself…which means it goes allllll over. Yesterday I decided to run with it and teach him how to use a spoon, which was slightly effective, but resulted in this picture. Yes, that is food on his head…and everywhere else. Haha. I’m sure we will figure it out eventually.

4. Yesterday Evan and I went swimming, and though it took him a while, he finally really enjoyed himself! Poor baby is usually pretty afraid of the water (except his bath…he loves his bath), but the ocean is just too much for him. I keep telling him he has to like the ocean–he’s a Hawaii baby! Yesterday we went to the pool instead, and after I eased him into it, he had a blast! This kid was the splash king of the pacific. It was adorable to see him having so much fun. Baby steps!

5. This week at Safeway Ben and Jerry’s was on sale and we had two coupons…so we splurged a little. My favorite Ben and Jerry’s flavor is the Karamel Sutra. It’s half chocolate ice cream with chocolate pieces, half vanilla caramel ice cream, and a core of caramel. IT IS SO GOOD. I love the Phish Food flavor too, but I will always always always choose the Karamel Sutra when given the option.

Well, I’m off to have a fun filled weekend with my family! I have no idea what we will be doing and Brinton is working most of the weekend, but I still have a feeling it will be a good one. Tomorrow Evan turns 11 months old! I’ll be sure to post tomorrow morning so you can see his adorable little face again.

Wardrobe Wishes and Wants

This summer it seems like fun florals and bright, crisp, light colors are everywhere. I love the white on white trend right now, and I also love a nice white pair of pants with a bold top or pops of color incorporated throughout the outfit.

Our budget is still pretty tight, so I can’t go out and put together this look quite the way I want to…so the next best option is to window shop! It’s almost just as fun, and it doesn’t hurt my wallet one bit!

While I’m not necessarily wishing for all of these specific pieces, I have wanted this Kendra Scott necklace for forever. I see it on everyone (in the blog world I mean) and I just absolutely love it. It is completely out of my price range, but I have my eye on it for someday. I also really love the Kate Spade studs! I usually tend to gravitate toward larger or dangling earrings, but since Evan loves to grab them and I am really enjoying my ears being attached to my head, I’ve started to wear studs more often. This Michael Kors bag is fabulous too. I’ve been wanting a structured bag for a while now, and I think something this size and shape would fit the bill perfectly.

The kimono trend this summer has completely caught my eye! I love how flowy and breezy they are. I know technically it’s just another layer, but it seems somehow like I would be cooler wearing it. I probably wouldn’t go for this exact one because it has open sleeves starting at the shoulder, but I liked the floral print and the color scheme. And the fedora…so cute. I like the contrast of a structured hat (and bag) with such a flowy top. Strappy heeled sandals seemed to complete the look for me, but I also think a cute wide strap flat sandal would be cute too. I love heels, but sometimes I don’t care if I look short…because I am short. There’s only so much that can be done to help that. Sometimes, I choose comfort over height. I think it’s a good choice.

I also realized after I put this outfit together that I forgot the shirt to go under the kimono! Rather than recreate the image though, I think I would just pair it with a simple blue top–most likely light blue–or even white. I love a clean look!

Blueberry Crumble for Two

I don’t know what it is, but for the last few days my sweet tooth has been completely controlling me. Ever since having gestational diabetes I have been a lot more aware of what kinds of foods I’m consuming and I’ve been trying to eat more balanced meals, but sometimes I don’t really do so well.

Okay, so it isn’t exactly a diabetes friendly recipe…but it is delicious. And since I don’t have diabetes anymore, I don’t mind splurging a bit. I mean I know having had gestational diabetes raises my risk factor for getting diabetes later…but sometimes you just have to “live on the wild side.”

Anyway, this post isn’t about diabetes. It’s about blueberries. And crumb topping. And whipped cream. Oh so yummy! The nice thing about this recipe is that it only makes two servings, so you can’t go too overboard! The recipe is also easily multiplied if you need to make a larger number of servings.

What You’ll Need:
For the filling:
1 cup of blueberries
2 tablespoons sugar
3/4 teaspoon cornstarch
1/4 teaspoon lemon juice

For the crumb:
1/4 cup flour
1/8 cup sugar
2 tablespoons butter

The How To:
Add the blueberries, sugar, cornstarch, and lemon juice to a small saucepan over medium to medium high heat. Stir so that everything is mixed well. As the blueberries heat up, keep stirring so the juices don’t burn, and bring to a boil. Allow the blueberries to boil for about a minute, and then spoon the mixture into two ramekins (or an oven-safe dish, depending on what you prefer).

In a small bowl, cube the butter into the flour and sugar, and work it with your hands until the texture is crumbly. Sprinkle the crumb mixture on top of the blueberries. I prefer quite a bit of crumb topping which turns out to be slightly doughy but crisp on top. If you want more crunch, sprinkle a thinner layer on the surface.


Bake at 400ºF for 15 to 20 minutes depending on how browned you like the top! I Baked mine for 15 minutes and then broiled the top for just a few minutes to really get it golden brown.


Be careful when you’re removing them from the oven–the ramekins will be very hot! Allow them to cool for a few minutes, and top with your favorite whipped topping.

High Five for Friday

You guys. I’m so sleepy. I had every intention of writing this post this morning during Evan’s first nap, but I prioritized cleaning my kitchen over blogging (an excellent and very necessary decision, might I add) and now it’s almost 9pm Hawaii time and I’m just now getting the chance to sit down. Oh well! Better late than never, right?

On to this week’s happenings!

1. Last weekend we went camping with a big group of our friends and we had a great time! I know I said that I would post pictures of our weekend on Instagram, but my phone died early in the evening on the first night and I accidentally left the memory card for our camera at home, so that didn’t happen. You know what? It felt amazing to be digitally disconnected for a day. It was refreshing. I think I need to do that more often. Anyway, we had a lot of fun, but camping with a 10 month old was a bit more challenging than I expected…aka…I got very, very little sleep. Haha. He absolutely would not go down in the pack-n-play and the only way he would sleep was next to me. Here are pictures Brinton took with his phone! Thanks love!

I don’t remember who came up with this idea, but these were an awesome twist on a traditional s’mores sandwich. Oh man. I want one now.

2. My poor baby boy has had a fever since yesterday morning. Yesterday it ended up being really high in the evening–103.2–and we ended up taking him to the doctor even though he had no other symptoms. Other than having a high fever everything else seemed totally normal, so they told us to just keep him comfortable and watch him to see if other symptoms popped up. His fever has been much lower today, never rising above 100.7, and he has been acting completely normal all day. I’m glad that it hasn’t been bothering him much, but I wish I knew what was causing it! I have a feeling it’s teething–I’ve heard babies can have fevers while teething, but I didn’t think they got that high! I checked his mouth tonight though, and sure enough I can see two more top teeth almost at the surface, and one more bottom tooth which just barely broke through. If he’s getting three teeth at once, no wonder he has been feverish! Hopefully that’s all this is and no other symptoms pop up this weekend.

3. Remember a few weeks ago when I said I wanted an Erin Condren life planner? My amazing husband was saving up for one for me and even used some of his father’s day money so I could order one. I’m excited because I should have it by Monday, and I’ve been looking forward to having it for a long time! Now hopefully I haven’t built it up so much in my mind that I’m disappointed when I see it. Haha do any of you ever do that? I’m sure I’ll love it!

4. Yesterday I attended a live webinar hosted by Mama Natural all about essential oils. In general, I tend to stay away from things that are sold using pyramid schemes and such, and I’m always a little hesitant about jumping on the bandwagon with suddenly super popular trends (and right now it seems like everybody and their brother is all about essential oils). I don’t know why…I just hesitate. I am interested in the oils though, and I’m really considering ordering a starter kit as something I can play with and see if I like them. I love the idea of using a more natural approach for curing ailments and such…so we’ll see how it goes. If I do order some, I’ll be sure to tell you all about them.

5. Recently I feel like I have kind of lost my identity at work. Since I have dropped down to casual part time (which I love, by the way) I feel so out of the loop, and I feel like maybe I don’t quite matter there anymore. It’s a hard thing to go from working full time to being there only two days a week for just a few hours–I have to remember that I’m not on the same track that I used to be on (as far as working toward a management position) and though my knowledge and abilities have not changed, my role has. Don’t get me wrong. I love being at home and would choose being mommy over anything else…I think sometimes I just wonder if I’m still valued there. Do any of you know what I mean?

6. I have the cutest baby. I know all moms feel this way…but seriously…look at this little face. Adorable.
